Spotlight on our Head Chef

The Exchequer has been operating as part of the Red Mist Leisure family for 4 years already (where has that time gone?).  During this time we have worked hard to build the great reputation that now precedes us; being recognised for our deliciously fresh, locally sourced and seasonal food along with our friendly staff and service, which is why we continue to excel when it comes to food reviews and Trip Advisor.

The Head Chef role, therefore, is of key importance and their personality and food styling is a vital element, which is incorporated into the seasonal menus and daily specials.  We wanted to take you behind the kitchen counters to get to know our very own Head Chef, the loveable Marcin Prokopczuk a little better. We caught up with him whilst he was tweaking the upcoming autumn menus to ask him a few questions:

What’s your favourite movie of all time?

“Due to spending most of my time in the kitchen, both at home and at work, I rarely get the time to watch movies, but when I do, I like to watch The Transporter series of movies, featuring Jason Statham.”

What would be your last supper (if it were your last night here on earth)?

“It would have to be my mother’s ‘Golabki’, which is a white cabbage roll made from softly-boiled white cabbage leaves wrapped around minced pork and herbs and baked in a casserole dish, served with a creamy tomato sauce.  It takes me home to my childhood.”

What hobbies/ passions do you have outside of work?

“I enjoy spending time with my girls – Izabella (aged 1), Kornelia (aged 5) and my beautiful wife Mawa. I also enjoy watching WRC rally racing and try to get to watch this live at least once a year!”

What’s your signature dish at work?

“A pork fillet wrapped in pancetta and stuffed with mushroom, spinach and goat’s cheese. Served with dauphinoise potato, tender-stem broccoli and finished with a red wine jus. This is classic British feel-good food at its best!”

What’s your favourite drink – any tips on how best to drink it?

“Crabbies Ginger Beer is the perfect post-shift refreshing drink with lots of ice and a squeeze of lime.  I also really enjoy a Haig Club whiskey and like it served with 2 cubes of ice and a splash of Pepsi cola.”

What’s your go-to dish to cook at home that is quick and tasty?

“A quick and easy chicken and vegetable stir fry! Ready in 10 minutes, full of flavour, taste and more importantly, goodness!”

Which celebrity Chef would you most like to be compared to and why?

“Gordon Ramsay! He has proven that with a lot of hard work and effort you can get anywhere you want in life…plus he is a great chef!”
